Lentil Soup...a taste of home

My mom always makes Lentil Soup and my God she makes it good! It warms your soul right up and it's SO easy (only need one pan) and afforadable to make a nice big batch. Recipe as follows:

Ingredients:
3 carrots (chopped)
2 sticks of Celery (chopped)
1 onion (chopped)
2 cloves of garlic (minced)
1 lb of green lentils
11 cups of liquid: half chicken broth, half water
(I usually do 6 cups broth, 5 cups water)
15oz. can of diced tomatoes
fresh thyme
salt, pepper to taste
olive oil
grated parmesean cheese

Directions:
saute mirapoix (carrots, celery & onion) in olive oil
throw garlic in
add tomato, cook down for 5-6 min
add lentils
add liquid
throw thyme in during last 30min
salt and pepper to taste
cover and let cook for 1 hour.

When served, drizzle olive oil and sprinkle parmesean cheese

Well, I've taken quite the break. My last post dated back to the beginning of July...with good reason. The moment I found out I was pregnant, I couldnt bear looking at food nevermind spending money to indulge in it. For the first few months, saltines, toast and ginger ale was about all this girl was indulging in, and I wasnt particularly sure you'd want my reviews. Now that I am beginning my sixth month, I am eating in full force, but I have found myself domesticating like crazy, so I have brought the table into my home. I have been cooking up a storm on my day off, which usually falls on a Sunday. There is nothing better than eating a nice fall meal in front of a great (New England Patriots) football game! Moving forward, I will be posting my recipes and tricks with a little dining out in between. I invite you to enjoy this new time in my life as much as I have been!
